In Myanmar there are many kinds of tree and those are very
useful and help people in various ways. Toddy tree are one
of those tree which can support and help to mankind. I would
like to praise her as a graceful damsel of central plain.
It is an idyllic model of the artists, an endearing feature
of Myanmar's landscape and benefactor of central Myanmar
people who rely on these trees for their living hood.
What is Toddy wine?
Toddy in Myanmar is not as weaterners may imagine made of
spirits sugar and hot water. It is called Htan Ye Ghar in
Myanmar language and sap of Palmyar tree also known as toddy
palm It must have been the most popular drink in Myanmar
since time immorial.

There are two kinds of toddy wine the sweet sap and the

the best drinks you can enjoy cool, clear and refreshingly

How to Make Toddy Wine?
The first the bitter toddy wine is made into two ways; the
first way is that the tody liquids are firstly fermented
in large Pot, which are kept in bushes. Remember that! Toddy
climbers hut are located in outsides of village among their
toddy plants. A night's fermentation and the sweet sap of
the palmyra becomes bitter, alcholic toddy wine. Oh! The
village boozer's tickets to blissful oblivion. When a large
pot is taken out of a bush it is seen to be covered with
white foam. Then the toddy wine is pour into the small pot
and ready to drink and sold.
The second
type of toddy wine is called Pin Jya Ye, which means the
sap direct from the tree. It is the superior and more expensive
of the two. Thes distinguishing feature is that it is fermented
during the tapping.
To get
Pin Ja ye, the toddy climbers puts the yeast in the pots
before hanging it to collect the sap, late in the afternoon.
That's all. The fermentation takes place all night and the
drink is ready to wet the throat of a special customer next
morning.
How many kinds in Toddy?
There are two kinds of Toddy in Myanmar, The male toddy
and the female toddy.
Male toddy palms bear flower but fruits. The flower is like
thick fingers forming a cluster about a foot long. The cluster
is tied together and its tip is shaved off with a very sharp
knife causing the sap to drip. The pot is hanging under
it to collect the sap. A pot that is hangs at about four
or five PM is usually full in the morning. (A pot hold a
about a liter)
Female
toddy bear fruit and the tapping can be done only when the
fruits are young. The fruits from around a thich stem. The
toddy- climber has to pound the stem a round the fruit lightly
with a wooden "hammer" to induce the sap to drip.
The tip of stem is shaved off and a pot is hung under the
stem. Needless to say the cluster and the grow shorter and
shorter day after day and the tapping is over when there
is no more cluster or stem left to shave off. The tapping
lasts about a month or a bit more. The tapping of male palms
becomes fruits. Incitentally, the jaggery from the male
palm is harder, keep longer and it's considered more medicinal.
The jeggery from female palm turns wet and soft in a short
time. Another mark of male toughness and superiority, eh?
What are the main products of Palm (toddy)?
The main products of palm (toddy) are toddy wine; Jaggery,
furniture (made from the stem and other parts of the tree)
and the leaves of the tree are used for roofing.
So tell me! How to make Jeggery?
Here's how jeggery is made. Boiling until it becomes thick
syrup evaporates the sweet toddy sap. The syrup is poured
into a pot until it fills half the pot. Then the syrup is
struck against the side of the pot with a flat wooden apoon,
producing an intriguing sound, somethings like "bom,
bom". This is done to make the syrup more cohesive
making it easier to form it into flatting balls. After about
15minutes of striking, the syrups is left to cool and thicken
further. Then it is manually shaped into rough-edged balls,
which are spread out on a mat to dry. Oh! I forgot to mention
it; when you visit a toddy climbers hut, you can also help
yourself to as much jaggery as you like-come- pliments of
the toddy-climber!
Jaggery
earns a respectable place in the popular Myanmar snacks,
even preferred over sugar because of its special aroma and
extra sweetening effect. There are a wide variety of snacks,
teasers, and relishes: pancake, puddings, doughnut soaked
in syrup, dumplings stuffed with a small chip of jaggery
etc. Pagoda festivals in the countryside, especially at
the open season after the monsoon are centers of such local
snacks, a must, if I may suggest for visitors to Myanmar,
to see us as we are, and enjoy our simple fare a'-la-jaggery.
For those who have tasted popcorn with maple syrup, please
try popcorn roasted with pure ghee and trickled with pure
jaggery syrup. It's simply delicious, believe me! Also,
nothing is so...so satisfying to a typical Myanmar senior
adult than a bite of jaggery after a rich Myanmar meal,
gulped with hot green tea, so...so...heavenly, "sans
equal" bien sure!
